Beans with onions as spoons
Ingredients : 300 grams beans, 150 grams bacon, a bunch of celery, fennel seeds, onions, hand-pressed olive oil and salt.

Preparation : Leave the beans soaking in hot water overnight. When ready to prepare, strain the water cook the beans in a terra cotta pot. Add small squares of bacon, chopped celery, fennel seeds, a little oil and hot water. Serve with raw onions, cut in half length-wise and split apart layer by layer. They substitute spoons and are eaten one bite at a time with the beans. Ideally accompanied by cornbread.
